How are you playing Dark Forces? Straight through Windows or using VDMSound or through DOSBox? Windows no longer properly emulates games; DOS emulation focuses on business applications. It's best to use something like DOSBox to play Dark Forces.
For MotS, try uninstalling, deleting your MotS program folder, and reinstalling. I can't give you any more help than that unless you provide more useful details, like at what point does it crash, has it always crashed at this point, etc.

DOSBox would be slower... but the question is, will it be noticeably slower, or will you not be able to tell the difference? If you can notice the speed difference, is it a problem?
The best way to figure it out is to try Dark Forces through DOSBox and see if it runs acceptably.
One of the pluses of using DOSBox is that it's cross-platform, which means no matter what OS you run it other... Mac, Linux, or any Windows version... whatever you run in it will run exactly the same. Whereas in Windows, the DOS emulator changes from version to version. In Vista I can't even run DOS games since full-screen console/DOS windows are disabled! (Although I think this is probably nVidia's fault, not MS's.)
