In dark forces I could own these dinos with my bar hands and hit & run strategy
but I just come across one in Jedi Knight (at Level 8 ) and he owns me HARD with 2 hits, I can't even hit it without a counterstrike
How can I defeat this monstrosity in JK?

Use the secondary lightsaber swing. Wait until after they chomp at you or run around behind it.

I don't understand "after their chomp"????
can I even evade their attack? I wasn't able too, but maybe it's just me who sucks lol

back up after their intial bite attack and attack them before they have another go. Kell Dragons are vicious though

Ugh, i HATE kell dragons. Especially in JK. What level are you on? Idk what the best way to deal with em up close is, but I have my own strategy on the Barons Hed level - there's some big huge windows on two sides of the kell dragon's room. Jump up on those and blow it up with either the rail detonator thing or thermal detonators  Yeah, I admit it's a cheap strategy, but it gets the job done without any chance of getting hurt. I just get clumsy trying to dodge its bites and end up getting myself eaten.

I forget exactly what I did to them but it probably involved gratuitous amounts of explosive weaponry at long range.

I'm in level 8 and I just decided to evade the kell dragon for now
I just hope i never ever have to kill one thro the game

I remember I just hid in the passage ways where they couldn't fit and used rail charges or threw thermal detonators at them until they died.

If its in the first one in that small room, then force jump on to one of the support beam ledges and shoot explosives at it. Thats what I did.
