How would I go about extracting the music from dark forces and playing them in a media player?

Well first of all there are already re-created MP3 soundtracks that are plain awesome. You can grab 'em at http://darkforces.jediknight.net/ in the downloads section.

If you want the original MIDI soundtrack, first you need to open the Dark Forces GOB files with a program that can extract them. Then you extract all the GMD files. There is a program called GMID.EXE (it comes with the BMP2DF tools which I think you can find with WDFUSE) to convert the GMDs to series of MIDI files.
