I've got a friend, I mentioned that I like Dark forces, she told me she loves it. She also told me that she never played Jedi Knight because it isn’t on Mac.
I’d like to share some of the mods of the original, but I don’t know which ones work on Mac.
Is there a list somewhere?

Pretty much all of them work aside from a couple of exceptions, but generally any level you try should play just fine if you use a program like MacGobber to convert the filetype. Custom music won't work but it won't crash the level or anything. The most notable levels that don't work on a Mac are Assassinate Darth Vader (needs some tweaking) and Asteroid, to my knowledge.

Asteroid worked on my mac, but then strangely never did again. I have yet to solve this mystery. I did however solve the problem with Assassinate Darth Vader and it's easy to correct. But I'm too lazy to write how to do it, let alone add a link to the thread where I explained it...
